The spirit of Hispania

Rooted in a rich history that traces back to the heart of London’s iconic Lombard Street, Hispania stands as a culinary testament to the passion for Spanish gastronomy. Our journey began in 2013 inspired to create an unparalleled experience of Spanish gastronomy and culture.

The first chapter unfolded at 72-74 Lombard Street, within the historic Lloyds Bank building. A sprawling 9,000 square feet of
space, Hispania emerged as a beacon of Spanish culinary excellence. Designed by the acclaimed interior designer and antique dealer, Lorenzo Castillo, and guided by the culinary expertise of award-winning chef Marcos Moran, Hispania on Lombard Street became the largest and most ambitious project devoted to Spanish gastronomy in London.

 We proudly extend our legacy with the opening of Hispania Kensington in late 2023, in a warm, familiar neighborhood. Our new establishment embodies the same commitment to excellence. Hispania Kensington invites you to savor the essence of Spanish cuisine and culture in a setting that feels like home.

Located on the beautiful shores of Nha Trang, our restaurant is part of the prestigious Grand Meliá, the first of its kind in Vietnam, opening in summer 2023.
As Asia’s first Hispania restaurant, we bring authentic Spanish cuisine to life using the freshest local ingredients, creating a unique and unforgettable culinary journey for our guests.

Meet the Team

Marcos Morán

Fifth generation of family chefs, Marcos is the executive chef of Casa Gerardo, (130 years of history), and he runs the different gastronomic areas in Hispania.

Marcos Morán has been awarded 1 “Michelin Star” and 3 “Repsol Soles”. Being also National Gastronomy Award, Marcos has been awarded as “chef de l ́avenir” by the international Gastronomy Academy.

Through his work and advice, he has made possible that from Hispania we can serve a careful gastronomic offer that puts in value all the regions of Spain.

 Adrián Mancheño

 An essential member of the Hispania team and right-hand to Marcos Morán, Adrián leads the kitchen at Hispania Brussels while overseeing F&B operations at NH Collection Hotel du Grand Sablon.

A connoisseur of Spanish gastronomy, he honed his skills at top restaurants like Coque Madrid and the three-starred Celler de Can Roca. His achievements have earned him two Delta Guide awards, including the prestigious Delta d’Or in 2017 for the best restaurant in Brussels.
